Because for some reason the developers are insistent on man and woman being the only humans in existence.
They used to allow you to not select a gender option, I know this since I did this and Facebook uses gender neutral pronouns for me. I know this is the case for other people as well. As far as I’m aware, you can’t change to that option from a gender. Though I’m not certain, but I’m not trying it on my account.
